No, Jack Sparrow does not die at the end of the movie. In fact, Pirates of the Caribbean 3: At World's End, will be released on May 25, 2007. All the characters in part 2 will appear in the next attraction, including new characters such as Jack Sparrow's father (played by Rolling Stones guitarist Keith Richards), and demonic pirate Captain Sao Feng (played by Chow Yun-Fat, from “Anna and the King”, “The Replacement Killers”, “Crouching Tiger, Hidden Dragon”, “Bulletproof Monk”)
